After being made redundant in January 2010 from the role of Operations Director, I found myself back in Manchester with two options; work for someone in another hospitality role or go it alone. Never one to shy away, I took the leap into running my own business.
The first nine months were really difficult. I ended up renting my flat out and moved into the restaurant storeroom to avoid going under plus it enabled me to pay our two members of staff. It was whilst enjoying the company of friends at a local veggie restaurant, it became obvious that being vegetarian myself, I could overhaul the norm of the vegetarian dining experience which back then was either old fashioned traditional or run down café.
I wanted good quality dishes using locally sourced ingredients. Service must be friendly and personalised. The environment modern and clean. Whether as a customer or employee I love to keep it simple and your experience should be enjoyable and a fun place to be.
Today we employee a team of twenty-four across three locations and operate in the very heart of Manchester and Birmingham. There’s me plus two others working in our head office on our future projects. Jointly, we’re planning our next site in another UK city, plus looking to launch our schools into each location. I’m most passionate about developing our teams and our schools will not only be kitchens to run our cookery schools, but training areas for both our chefs and front of house teams.
Manchester & Birmingham both employ apprentices, our future rising stars. We’ve just teamed up with Manchester University and paired with one of their design students to work on the application of our new branding plus every chef in our Manchester kitchen has just signed up to complete NVQs.
Developing the skills and confidence of our employees is what makes running a business worthwhile and for that, we all thank you for supporting 1847.
A unique club & experience awaits our members and whether you’re a regular diner or seasonal, the benefits of joining this small community are there for you to enjoy. Welcome to Club 1847…

Join our development chef for a day based around our own philosophy of what’s good now. Whilst our restaurant menus are based around many complex ingredients, and modern techniques, increasingly the foundation of our menus are fluid concepts that can be adapted to whatever we find to be available to us and at its best - be that from our gardens, wild & foraged foods or the best of seasonal British home-grown. We will share with you some of our core techniques and ingredients, and then show you how with a basic repertoire you can adapt and evolve your cooking to suit the best of British any time of year. Simple and brilliant, you’ll leave with a readily adaptable selection of basics that you can evolve into your own.
Our cookery schools are a relaxed and informal affair with a mixture of demonstrations, hands-on cookery, plenty of scoffing & a few glasses of wine!

Bistro 1847 is a small collection of vegetarian bistro’s within the UK. Our first opened in Manchester city centre back in Spring 2010 with a second in the heart of Birmingham during Autumn 2013.
Due to our plans to expand we are always looking for people passionate about hospitality whether that be chefs, front of house staff or management.
Our chefs will work closely with our Development Chef Alex Claridge. His food is primarily British, with a real sense of humour and ambition to push the boundaries of meat-free cooking – you’ll find dishes influenced by wholefoods, but equally expect ingredients and techniques from the world of fine dining.
Our front of house teams work closely with our operations manager who strives to create an experience second to none for our customers whilst developing and offering an exciting cocktail, wine, beer and spirit list.
With each new site, we also look for management positions, whether that be in the restaurants themselves or based within our head offices in central Manchester.
Bistro 1847 is a forward thinking company who established and grew through the recession. It’s this determination that creates an exciting workplace with prospects of growth for any individual. We offer flexible working hours, 28 days annual leave, workplace training & development plus other benefits.
If you have what it takes to be part of this team, please email your CV to Careers@By1847.com and we will keep it on file until a relevant position becomes available.
