Chef Alex

Everyone has food that means something more to them than sustenance. Meals shared with loved ones past, present and future. I’m not sure I ever meant to be a chef – but other modes of telling stories I was afraid of forgetting kept falling short. Every novel I started writing all too quickly became a poor derivative shadow of whatever I had read most recently (most of them involved wizards that lived under a staircase), and my dreams of becoming a rockstar fell apart when it became apparent that I couldn’t sing – our chefs will vouch for the latter. So it’s food that takes me back, and a culture of memory, nostalgia and emotion that drives our kitchen teams.

Our menus are the product of our collective experiences, and the resultant cooking is an unashamedly magpie cuisine, borrowing inspiration and ingredients from pretty much everywhere – memory, film, music, books and square pegs in round holes. Such is the joy of sharing in food that takes its inspiration from everything; we’re inspired by folk music, fawlty towers and 99 flakes, especially the days when they actually cost 99p.

We want to be the most innovative and ambitious vegetarian restaurants in the UK, and work tirelessly on new concepts, flavours and ways of improving our customer experience. We would be nothing without our wonderful customers who support and follow us on this journey, and welcome their input and involvement. Our members have unique access to recipes, blogs and tasting events to be on the front-line of our food, so please do take a moment to register so we can keep in touch.

A small team of chefs work at each of our restaurants to serve food that takes you somewhere else, gives you a giggle and, just maybe, makes good memories in its own right. And so it goes on.

I sincerely hope you enjoy your experience with us and, along with my teams, we look forward to welcoming you to 1847.

Join our development chef for a day based around our own philosophy of what’s good now. Whilst our restaurant menus are based around many complex ingredients, and modern techniques, increasingly the foundation of our menus are fluid concepts that can be adapted to whatever we find to be available to us and at its best - be that from our gardens, wild & foraged foods or the best of seasonal British home-grown. We will share with you some of our core techniques and ingredients, and then show you how with a basic repertoire you can adapt and evolve your cooking to suit the best of British any time of year. Simple and brilliant, you’ll leave with a readily adaptable selection of basics that you can evolve into your own.

Our cookery schools are a relaxed and informal affair with a mixture of demonstrations, hands-on cookery, plenty of scoffing & a few glasses of wine!

Bistro 1847 is a small collection of vegetarian bistro’s within the UK. Our first opened in Manchester city centre back in Spring 2010 with a second in the heart of Birmingham during Autumn 2013.

Due to our plans to expand we are always looking for people passionate about hospitality whether that be chefs, front of house staff or management.

Our chefs will work closely with our Development Chef Alex Claridge. His food is primarily British, with a real sense of humour and ambition to push the boundaries of meat-free cooking – you’ll find dishes influenced by wholefoods, but equally expect ingredients and techniques from the world of fine dining.

Our front of house teams work closely with our operations manager who strives to create an experience second to none for our customers whilst developing and offering an exciting cocktail, wine, beer and spirit list.

With each new site, we also look for management positions, whether that be in the restaurants themselves or based within our head offices in central Manchester.

Bistro 1847 is a forward thinking company who established and grew through the recession. It’s this determination that creates an exciting workplace with prospects of growth for any individual. We offer flexible working hours, 28 days annual leave, workplace training & development plus other benefits.

If you have what it takes to be part of this team, please email your CV to and we will keep it on file until a relevant position becomes available.
